SCA BARISTRA SKILLS INTERMEDIATE LEVEL 咖啡師中級認證 (10 POINTS)
The Intermediate level is suitable if you are already part of the industry, working in the field covered by the module, and have a firm knowledge of the basic skills. This module is for established barista enhance level through a deeper understanding of coffee and brewing techniques.
| 本課程內容包括： – 咖啡歷史，認識 Arabic 及 Robusta – 認識咖啡品種，種植，處理過程，分級，儲存，運輸，烘培及如何鑑賞濃縮咖啡 – 了解咖啡萃取的原理及濃縮咖啡作基底的其他飲料製作方法 – 認識咖啡機和磨豆機的理論及操作 – 認識牛奶的成分，認識不同沖煮方法及拉花技巧 – 烘培基礎理論 – 咖啡生/熟豆保鮮度 – 認識沖煮基礎理論 |
Course Content Includes: – The History of Coffee – Classification, processing methods and majors coffee zones – The changes through the roasting process – The handling of roasted coffee – The applications of different degrees of roasting – Espresso type, SCAE standard for espresso – Operation of Espresso Machine, Grinder – Espresso Cupping – The milk chemistry |
