SCAE / SCA BARISTA SKILLS FOUNDATION LEVEL 咖啡師基礎級認證 (5 POINTS)

The Foundation level provides a first taste of a specific coffee discipline and practical skills to get you to start in your barista path. The Foundation level requires no previous experience.

本課程著重於基本理解及掌握設置磨豆機,制作濃縮咖啡,卡布奇諾所需的奶泡和牛奶質感的打泡技巧。學習通過基本手試測試及筆試,將可獲得歐洲精品咖啡協會-文憑學分5分及證書一張

– 掌握研磨,配粉及填壓
– 萃取及沖煮咖啡
– 打發牛奶的技巧
– 衛生,健康與安全
– 清潔,保養和疑難排解

SCAE / SCA BARISTRA SKILLS INTERMEDIATE LEVEL 咖啡師中級認證 (10 POINTS)

The Intermediate level is suitable if you are already part of the industry, working in the field covered by the module, and have a firm knowledge of the basic skills. This module is for established barista enhance level through a deeper understanding of coffee and brewing techniques.

本課程內容包括:
– 咖啡歷史,認識 Arabic 及 Robusta
– 認識咖啡品種,種植,處理過程,分級,儲存,運輸,烘培及如何鑑賞濃縮咖啡
– 了解咖啡萃取的原理及濃縮咖啡作基底的其他飲料製作方法
– 認識咖啡機和磨豆機的理論及操作
– 認識牛奶的成分,認識不同沖煮方法及拉花技巧
– 烘培基礎理論
– 咖啡生/熟豆保鮮度
– 認識沖煮基礎理論
Course Content Includes:
– The History of Coffee
– Classification, processing methods and majors coffee zones
– The changes through the roasting process
– The handling of roasted coffee
– The applications of different degrees of roasting
– Espresso type, SCAE standard for espresso
– Operation of Espresso Machine, Grinder
– Espresso Cupping
– The milk chemistry

SCAE / SCA BARISTRA SKILLS PROFESSIONAL LEVEL 咖啡師專業級認證 (25 POINTS)

The Professional level is suitable if you want to pursue specialist knowledge at a high level in your subject. Success at this level should indicate to employers competence to work in the field. Candidates must hold the Intermediate qualification in the module.  Ideal for Head Baristas looking to provide in house training or to start competing at a professional level.

* The science and evaluation of extraction.
* Roasted coffee storage variables.
* Roasting and its influence on flavour.
* Milk science.
* Advanced latte art.
* Café management.
* Advanced Barista Equipment Evaluation.
