BREWING MODULE
Learn about the variety of methods for brewing coffee and the brewing variables that affect quality. The Brewing module provides hands-on learning on grind profiles, brewing methods, measuring coffee strength and charting a coffee’s extraction.

The study of Brewing introduce to the different ways of brewing coffee from V60, clever dripper and French press. In addition, this module allows you to get hands-on and learn to analyze your grind profile, match your grind to your brewing method and to scientifically measure coffee strength and chart a coffee’s extraction.

SCAE / SCA BREWING FOUNDATION LEVEL 咖啡沖煮 / 手沖初級 (5 POINTS)

The Foundation level introduces the beginner to the different ways of brewing coffee, from V60, clever dripper and French press comparative. The Foundation level requires no previous experience

本課程著重於基本理解及掌握技巧。學員通過基本手試測試及筆試,將可獲得歐洲精品咖啡協會-文憑學分5分及證書一張!

本課程內容包括:
Course Content Includes:
–  Water to coffee ratio basics.
* Introduction to grind size.
* Brew time basics.
* Introduction to water temperature.
* Introduction to brew turbulence.
* Basic brewing using equipment including V60 and others.

SCAE / SCA BREWING INTERMEDIATE LEVEL 咖啡沖煮 / 手沖中級認證 (10 POINTS)

The Intermediate level is very much a hands-on workshop where you will learn to analyze your grind profile, match your grind to your brewing method and to scientifically measure coffee strength and chart a coffee’s extraction.

本課程內容包括:

  • 咖啡沖煮方法指導
  • SCAE 金杯準則:萃取率與濃度的基礎概念
  • 咖啡濃度測量的方式與原理
  • 咖啡沖煮的各式變因討論
  • 了解研磨與烘焙對咖啡的影響
  • 萃取實作與校正
Course Content Includes:

  • Scientific measurement of coffee strength.
  • Charting coffee extraction.
  • Analysing brewed coffee and espresso.
  • Using a digital refractometer.

SCAE / SCA BREWING PROFESSIONAL LEVEL 咖啡沖煮 / 手沖專業級認證 (25 POINTS)

The Professional level is takes the scientific knowledge a stage further, covering the impact of temperature on brewing, acidity levels during the brewing process, the impact of water quality on coffee brewing and flavour and understanding how to chart espresso and brew within a given extraction percentage.

Course Outline:
* By-pass charting and flavour.
* Grind particle size and its effect.
* Influencing brewing parameters.
* Water quality and its effect.
* Holding methods and their impact on quality and flavour.
* Roasting and its effect on flavour.
